🍜 Garlic Sesame Rice Noodles with Steamed Vegetables

Ingredients:
- 225g rice noodles
- 2 tbsp sesame oil
- 3 cloves garlic, minced
- ¼ tsp ground ginger
- ¼ cup soy sauce
- 1 tbsp sugar (or any other sweetener)
- 1 tbsp water
- 4 cups mixed vegetables (broccoli, carrots, courgette, snap peas)
- ¼ cup chopped spring onions
Instructions:
- Cut 4 cups mixed vegetables into bite-sized pieces, mince 3 cloves garlic and chop ¼ cup spring onions. Four cups is more chopping than the noodles will give you time for, so do it first.
- Cook 225g rice noodles according to the packet instructions, then drain and set aside.
- Steam the vegetables in a steamer basket, or in a microwave-safe dish with a splash of water, until crisp-tender, about 5-7 minutes.
- While the vegetables steam, heat 2 tbsp sesame oil in a small saucepan over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add ¼ cup soy sauce, 1 tbsp sugar, 1 tbsp water and ¼ tsp ground ginger, and cook for 2-3 minutes, stirring occasionally, until the sauce thickens slightly.
- Combine the noodles, steamed vegetables and sauce in a large bowl, and toss well to coat evenly.
- Sprinkle the chopped spring onions over the dish and serve immediately.
Note: Customise with your favourite vegetables, or add tofu, chicken or shrimp.
